They love taking advantage of rarer cuts of meat and cooking them low and slow in just the right way to enrich the meats with flavour. They pride themselves in offering seasonal dishes that are locally sourced where possible and work closely with Stickleback fish suppliers in Welham Green to ensure they have the pick of the market as soon as the boats come in. They home-smoke their salmon and source their pork from Dingley Dell farm, which have a superb reputation for producing the highest quality meat.
